Boca meatless chick'n pattie

If you recall from my "last supper post" one of my beloved chilhood dishes was schnitzel.  Traditional schnitzel is pounded veal coated in egg-wash and bread crumbs and pan fried.  I never like veal much and i would never eat it (we just learned about it in culinary school and i feel sick eating a baby cow) and to be honest, I've only really had chicken schnitzel.  Some fast food companies and tyson like to make their own, ultra-unhealthy versions (not that the traditional verision is a nutritional superstar, but still...).  Boca has a good rep with me though, i am obsessed with their original vegan burgers (i eat at least two daily, not kidding but i like em!) so i thought maybe i should give their version of crispy "chick'n" a shot. Each pattie is 160 calories, with 6 g fat, 15 g carbs, 2g fiber, 11g protien, and 1 g sugar.  Pretty good next to the other "crispy" chickens you find out there loaded with added salt AND sugar in the coating (just read fast food nation and you'll understand).  Ok now the first time i made it, i totally overheat it so i dried out (my microwave is too powerful) so i tried again and came out with a nice, moist pattie. I must say, its not the schnitzel i am used to, but it does remind me of those little tyson nuggets. It is actually very tasty and i would defiently eat this again! Good as a quick protien entree or in a sandwich, or even a preworkout snack (hey its a good balance of fat, carbs, and protien and better than a powerbar!).  Ahh boca, one again, i love your patties!
