Hey, I'm getting a little bored of my usual breakfast egg concoction, it happens time to time so I take a break.  I was wondering what other people are eating for breakfast that's pretty filling and healthy.

Al's concoction is delcious, i am getting into the habit of doing it almost daily as well. But for filling up, main ingredients should be protien and fiber. Eggs are good protien breakfast staple, but I've had heated cold cut lean ham (or for vegetarians like Al, maybe tofurky?) which if heated on a pan or microwave for a little bit makes a BIG difference. That with some wheat toast (for the fiber) or whole wheat torilla with some salsa could make a nice breakfast wrap. If your on the sweeter side, try fat free ricotta cheese (protein) maybe with some almond or vanilla extract and some berries (fiber).

Currently obsessed with

Currently obsessed with mixing Fiber One (1/2 cup) in with a tub of yogurt. It's best with simple yogurt flavors like vanilla, strawberry, etc. It makes for a good low calorie (I stick to fat free no sugar added yogurts) breakfast with protein and fiber.... yum! I love breakfast... anyone have any other good ideas?

My staple breakfast is

My staple breakfast is oatmeal w.soy milk and banana or kashi glc with soy when I'm really running late for class. But I've got a nice little healthied up weekend breakfast that I have on Saturdays. It's kasi glc waffles w.sf syrup , a morning star breakfast patty and egg beaters. I was so excited with I thought this up - it's a far cry from the eggo waffles, fat filled swift premuim brown and serve sausages and sugar laden syrup I'm used to at home. heh

Cristina: I love fiber one with yogurt! i sorta make something similar alomst daily! i mix a little yogurt with chopped up blueberries and strawberries and fiber one and a little light maple syrup (weird, but actually really yummy)
I also posted a few months back for an awesome waffle/egg/ham recipe inspire by something i saw on Top Chef which is also delicious. Look for it in the recipe section.

What kind of syrup do y'all favor? I really like Joseph's sugar free all natural maple syrup. I get it at whole foods, it is really thick and rich - better than most lite kinds I've tried. A little maple can make anything taste great in the morning!

I put sugar free maple syrup on EVERYTHING, from oatmeal to yogurt... it makes anything better. I use Maple Grove Farms' syrup because it's super low in calories (15 for 1/4 cup) but I want to try Walden Farms' pancake syrup! I just can't seem to find it in stores.I know Hungry Waif likes it but I just can't believe it's calorie free! Even Splenda isn't calorie free. How is it possible? I also want to try their blueberry syrup.

I love Walden Farms blueberry syrup. HW actually turned me on to it. Nothing except water is truely calorie free. But 5 or 10 calories here or there is NOT gonna hurt you. Just don't down the whole bottle Super Troopers style.

yes waldens has many misses (alfredo sauce and dressings make me gag!) but i do admit their syrups are very dead on. Carry's sugar free is also a good brand and Sorbee but i havent seen that one on shelves lately...

My Breakfast Rotation

1. Honey Nut Cheerios + Fat Free Milk

2. Plain Quaker Oatmeal and either raspberry syrup or fresh fruit.

3. Refried Beens + Eggs + Cheese(BEC)

4. Cheese and Bell Pepper Omelet

5. Bacon + Egg + Cheese + Bell Pepper + Onion + Tapatio in a burrito

 When I have #4 not much is required again until about dinner time. Perfect for days when I know that I will be running around until really late. I eat #1 + #2 the most often, #3 + #4 + #5 are usually reserved for saturday mornings.

Pumpkin Oatmeal

I'm in the habit of fixing my breakfast at night to make sure time is never an excuse to skip a good meal in the morning. I like to soak 3/4 cup old fashioned oats in water for a bit then I mix Stonyfield Farms Plain Fat-Free Yogurt, canned pumpkin (not pumpkin pie filling), some vanilla protein powder, and cinnamon into the oats. The combination is great the next morning chilled right out of the fridge. I grab it on my way to class and eat it while I'm reviewing notes or doing some reading before my professor arrives.

Breakfast on the fly

Breakfast during summer and breakfast during the school year are two different things. At home I like yogurt sprinkled with (Trader Joes) Granny Apple Granola and fresh fuit with the mandatory cup of coffee. Today I made my husband and I pancakes with homemade hot blueberry topping. ( 2 cups fresh blueberries, 1/2 cup water, 1/4 cup sugar, 2 tsp lemon juice and one tab cornstarch) When I teach my am class during the school year it is usually a bananna, small container of yogurt and tea with a touch of honey. I can relate to Cole since I am the professor at the front of the class. My students have all just rolled out of bed and often times have not had breakfast. I do allow them to eat in class as long as they clean up after themselves a pack out their trash. After a few weeks they get very creative bringing in a box of cereal, non-fat milk and spoons and bowels for the class. Breakfast bars are a bit hit for the on-the-go group. Most have the obligitory coffee in the sippy cup from Starbucks.

1. Fiber One cereal. I like to buy the regular stuff and add a few raisins of my own. Any fruit would be yummy.
2. Apple and yogurt. (Activia or Yoplait Light)
3. Boca Breakfast Wraps (southwestern) These are yummy and easy to pop in the mircowave at work!
4. I just learned to make these yummy 'omlets'. Put egg beaters and whatever meat/veggies/cheese you want in a ziploc bag. Toss into a pot of boiling water and let it cook while you get ready in the morning! Yummy! I like to top mine with salsa.
5. Whole wheat toast or bagle topped with peanut butter or some yummy cream cheese, OR make an egg sandwich with it. (I prefer The Alternative Bagle. It's low cal and high in fiber.)

Yeah for sure! It's way good and easy to make. Just make sure your eggs are cooked all the way...the bigger your omlet the longer it'll take for the eggs to cook in the middle. :)

Thank you so much for all the suggestions. So many of them sound really, really good.
Heather, i really like those boca wraps and i totally forgot about those. I've never tried the kashi waffles, I'll have to give those a try.
So here's my concoction. Its really pretty simple:
cut up as much or as little onion and red onion as you want into little pieces, heat a pan w/ non-stick spray and let them sautee for awhile over very low, and I mean low, heat. I like to wait till they're pretty mushy and have just bit of crunch left. Then put one cup of egg substitute in and sprinkle dill weed, and salt over everything. I use a lot of dill weed because I love the flavor of it. Then proceed to scramble. About half way through scrambling I'll add a little more dill and more salt. I love it.
