Mini Meatloaves!

since i see many people wanting me to post more recipes, i am gonna start doing more of that. I didnt come up with this recipe myself but i used to make these a lot when i was in high school (dont know why but i had ground turkey frenzy back then for some reason).
- 1 pound of extra-lean ground beef
- 1 medium carrot, shredded
- 1 medium zucchini, shredded and squeezed dry
- 1/2 yellow onion, finely chopped
- 1/2 green pepper, finely chopped
- 1 tbsp chili powder
- 2 tbsp Worcestershire sauce
- 1 slice whole grain bread as breadcrumbs
- 2 egg whites
- 1/3 cup tomato ketchup
Crumble ground beef into a large bowl. Add shredded carrots and zucchini, and chopped onion and green pepper. Add chili powder, Worcestershire sauce and breadcrumbs. Stir with a fork. Add egg whites and stir again with a fork until well blended. You can knead the mixture with your hands but sometimes this makes the meat overly tough.
Spoon mixture into prepared muffin pan, and top each cup with ketchup. Bake for 25 minutes, making sure that the internal temperature reaches 165 degrees.
Serves 6.

This looks yummy! I'll have to give it a try. (I'm assuming a serving is one cupcake, right?) So, here's a question. (and i totally understand if it seems to nosy or personal) How tall are you? What is your weight? Or are you the type that ignores weight and focuses on health and how you feel?
I am about 5'2, i am a teeny
I am about 5'2, i am a teeny person, small hands, small feet, small fingers (toe rings fit my fingers!). I dont focus a lot on weight cause weight is so trivial and can vary based on your hormones, time of day, exercise habits, etc. i do admit that i am a little on the underweight side as i usually hover between 95-98 lbs. Currently, i am trying to "bulk up" a little and i am working with a nutritionist on that to help me add a little "junk" in my trunk, cause man do i need it! But i eat healthfully because it makes me feel good, and gives me energy.

If you're underweight and want to "bulk up" then how come you focus so much on "diet" products and stuff that is "figure friendly" and wont "end up on your hips". Why do you worry so much about "calorie catastrophes" if you could use a few extra calories? Your BMI is between 17.4 and 17.9. A healthy BMI is 18.5-24.9, with anything under 18.5 being considered unhealthy. Plenty of foods are higher in calories and still healthy.

I dont worry about "calorie catastrophes" and if you read my blog posts, i usually dont like buy "diet-y" items at all. I just try to stay healthy, and i refer to catastrophes as those +1300 cal salads from major chain resturants and some suprising sources of trans fat,etc. I try diet products not only for myself, but because there is a shared concern about weight in our society (sad, but true). Since i studied nutrition, I can also put in my two cents about the items i review for people. Just because i review a diet item, does not mean i, myself am on a diet. I know a bmi of under 18.5 is unhealthy, but realize that i am built small and i am working with a professional. My blog does not reflect what i eat daily, its just my opinion about the stuff i find out there on the market.

Hi...this is going to sound a little random...but after reading your comment about how you are working with a nutritionist to try to gain a little weight/muscle...i was wondering if you could share some of the ways your nutritionist recommends for gaining weight safetly and healthfully. I've always struggled to gain weight, but i still want to eat healthy foods.

sure, i'll be more than happy too. Its strange isn't it? the media touts all these new diet phenomenons and new ways to loose weight, but they leave out healthful ways to gain weight and i actually know many people who want to gain a little and bulk up but are a little clueless as to what to do? are they supposed to eat at KFC all day? Maybe I'll post a weekly nutrtionist update where i'll share some of the things i learned (i also eat with my nutrtionist so maybe i'll post a little about our meal together if anyone is interested).

I've never heard of a girl
I've never heard of a girl claiming to work with a nutritionist to "bulk up." You are the first. I suggest you add healthy fats to your diet like peanut butter and olive oil. And rather than nonfat dairy, switch to lowfat. I wish I had to worry about bulking up rather than worrying about the number of calories in my food and trying to watching my food intake. I'm not fat either but maintaining my figure.
