Recipe: Ceviche!

We are doing South American countries in my International culinary class and realized what a great ddish ceviche actually is! yummy, protien rich, and simple to prepare! heres the recipe we used but you can ajdust by making it more or less spicy using more or less jalapenos.
2lbs of mixed seafood like tilapia fillet or other firm white fish fillet, shrimp or scallops,cubed
- Combine all ingredients except red onion and mix well.
- Place red onion on top and let it marinate in the refrigerator for at least 2-3 hours before serving.
- Before serving, mix well and serve with lettuce, corn, avocado or other cold salad vegetables on the side.
- It is important to use a juicer that squeezes the juice out of the limes, not one that will tear the membrane of the lime sections since this will make the lime juice bitter.

You forgot to mention that this is used with raw fish. The citric acid causes the proteins in the seafood to become denatured, which pickles or "cooks" the fish without heat.
It is very similar to my family's Lutefisk dish, except using acid instead of an alkaline.
