I know a whole movement sprouted when shiritaki came on the scene and a pasta/noodle alternative for the weight watching and low carbers became available. But in some health food specialty markets you may also spot Kelp Noodles. I found these kelp noodles made by Sea Triangle at my local whole foods right next beside my trusty shiritaki! Anyhow, this really tickled my appetite and curiosity cause it seem like a nutrtional dream. a four oz serving (with a total of 3 servings per package), has a whopping 6 calories (which are probablly burned while attempting to find a good knife to open the tightly sealed package), 1 gram of fiber, 1gm of carbohydrate, sadly, no protein, but actually some calcium (15% of your daily value!). I really wanted these to be yummy, i really really really did, but they were so bland and odd on my toungue. so i added some flavor with soy soy sauce and hot mustard (what i like to mix my shiritaki noodles with). Although better (not as bland), i must say their texture was very strange and not a good kind of strange. Here the best way i can describe them: you know the glue used in a hot glue gun and it becomes kinda stringy....thats kind of what its like. I am not totally giving up on this product though, i was turned off by shritaki too before i mastered making them properly. their site offeres some nice recipes too, so these noodles still have hope.
