Top Chef recipe makeover!

ok, i am bad with watching tv, cause all my favorite shows are gone (sex and the city, arrested development, etc)... but i am obsessed now with Bravo's Top Chef, naturally, being a food adict and all...the recipes they create look absolutly delicious, most of the time (last episode, one of the chefs made burnt toast with burnt eggs...yuck). so i decided to remake some of the winning recipes for you to make them more figure friendly, the first on ill tackle was from episode 7's breakfast on the beach episode. the winner was chef Elia's (my favorite chef on the show, next to Ilan, but i actuallywant Elia to win, i want to marry Ilan!) breakfast waffle combo.
1 Eggo's Special K waffle
1 tbl spoon fat free refried beans
1/4 cup egg beaters
1slice Munster cheese
1 slice of 97% fat free ham
1 tbl spoon parmesan cheese
1 tablespoon chopped fresh parsley leaves
Salt and pepper for seasoning
Waldens (or some other sugar free version) Maple syrup for drizzling
Directions:1. Heat broiler in oven.2. . In a small skillet pour egg beater mixture into skillet and fry (with PAM) to desired firmness.4. Toast the waffle to desired doneness. refried bean mixture.5. Drizzle with maple syrup and top with cheese.6. Put waffle on a baking sheet and broil until cheese melts, watching carefully so it does not burn.7. Remove from oven, top with ham, fried egg and top with chopped parsley. Season to taste and serve immediately.
Serves 1 and each serving is about 140 calories with only 3 grams of fat!
Awesome idea, but careful with your nutritional analysis. A slice of meunster cheese alone has around 100 calories and 8g fat!
actually, i made a mistake, i meant to replace the meunster cheese with the parmesan...muenster was used in the original recipe so if you like it, it would work. but parmesan is a low cal choice although there are low cal/low fat meunster cheeses out there. So the nutrtional info is for the recipe WITHOUT the muenster.
