When I was in the midst of my culinary training, I really didn’t feel like replicating my classroom work at home, ie, cook. I know what your thinking, but most of my instructors felt the same way. My favorite chef instructor of mine told me his favorite thing to make at home is Stouffer’s mac’n cheese. Personally, I’m not a huge cheese fan in general (you’ll here more about this later in the review) but I can see where he’s coming from and I don’t blame him. I don’t like having a freezer stocked with lean cuisines and frozen entrees (hello, takes over the space for fro yo and waffles!), but I do like spending less than three minuets prepping a meal. One of my favorite, under three minute meal I like to make is what me roommate calls, pizza al a hungry waif (its actually my name, but only a few select reader know my real name, tee hee!). Now, I’m not a big cheese fan but soy cheese I don’t mind as much because it means I can forgo the lactose pill. Plus, soy cheese is usually lower in saturated fat and higher in protein than most cheeses. So I decided to try Veggie Grated Parmesan topping. They also have a line of single soy cheese slices and shreds mimicking most of the common cheeses out there. Now, cheese lovers of the world, hear me out; soy cheese might turn you off. They aren’t especially delicious if you know and love good quality cheese. But if you’re like me and are not the biggest fan of cheese (of the lactose) then I would consider soy cheese, or at least this topping. A two tsp serving of the grated parmesan is 15 calories with .5g fat, no carbs, and 2g protein. Its melting point is high if you’re going for that pizza thing, but it sprinkles nicely on salads or pastas. The taste is not quite as pungent as standard parmesan and its actually a little less salty, but I’d say is a nice sub, if your going the soy cheese route. No bad, but honestly, good parmesan, if you can get it, is really unbeatable so there’s nothing like the real deal, but this is better if its soy cheese of the mystery green parmesan can.
